1 cup whole wheat flour
1/2 cup all purpose flour
3 TBL Cocoa powder (unsweetened)
1 cup sugar (or 1/2 cup Zing baking blend sugar substitute)
1 tsp Baking Soda
1/2 tsp salt
3 TBL applesauce
2 TBL oil
1 tsp vinegar
1 tsp vanilla
1 cup water
Preheat oven to 350. Mix all the dry ingredients together. Add in the
wet ingredients and mix until just smooth, don't over do it because it
will turn out flat once baked. Bake in a greased 8x8 glass pan or 12
cupcakes. Bake for 35 minutes for a cake and 18-20 for cupcakes or
until knife comes out clean.
This is my go to cake for Nora with her egg allergies and I've
switched it to be a bit healthier and it turned out extra moist and
delicious with the changes. I don't feel too guilty eating it or giving
it to the kids either!
